挤压产品的成分贡献-蛋白质来源
在挤压过程中,会发生一些物理、化学、功能和营养特性的变化。
蛋白质的变性是影响挤出物性能的最重要因素。Camire in Riaz(2000)认为,挤压过程中蛋白质的变化可分为功能变化和营养变化。在功能上,挤出会降低在水中的溶解度,稀释的缓冲液也有助于挤出物的织构形成。而在营养上,挤压将减少赖氨酸和提高消化率。
